Sister’s Birthday + Bruschettas

Celebrated sis’s birthday early at Ritz Carlton’s Summer Pavilion; such a nice and grand hotel. Really enjoyed the food and recommendations.

More importantly, as always, it was the company that mattered. 😉

Bren and I went for a light (sort of!) dinner after that @ Skinny Pizza and the meatballs pizza & mushroom risotto did not disappoint.

Love, love, love the meatballs…which, unfortunately were not captured in this pic cos’ we ate ’em all.

Speaking of yum, I’ve recently fallen in love with making bruschettas!

Found a recipe online and adapted it to our preferences…and it has been a winner, especially for breakfasts or an evening snack.

So simple and so delicious!

Here’s the recipe, in case you’d like to try:

6 seeded + diced tomatoes (I used cherry tomatoes)

2 minced garlic cloves (I add less on days when I know Bren is going to give long presentations)

3 tbsp minced basil

1/4 tsp salt

pepper to taste

1 1/2 tbsp olive oil

2 tbsp grated Parmesan

1 baguette

1. Combine all ingredients in bowl, and blend well. Cover and refrigerate for at least 30 mins. I usually do it the night before.

2. Slice up baguette, drizzle olive oil on top and sprinkle salt & pepper. Bake at 170 degrees C till golden brown. Takes about 5-10 mins.

3. Spoon mix onto toasted bread and top with oregano herb mix.
