Me-time

I recently read in a women’s health article about how taking a day’s leave regularly to have more long weekends are better for our health than taking yearly long vacations – and I truly agree!

Have been taking a day’s leave every month this year, and I try to plan it around public hols, or important dates that involve my loved ones, and so far so good! It definitely helps my sanity to take constant breaks and naturally, my physical health improves.

Especially love my me-time doing stuff that I value…things like meeting up with parents or Bren for lunch, reading a great book at a quiet cafe, or even just doing household chores while watching good tv.

Today, I bought lovely freesias too…

French Toast

Made this for breakfast today, and am very pleased at how it turned out.

A little indulgence for a slow Saturday morning…

I realised it went so well with the organic maple syrup, that I happily poured out a lot more to indulge a bit; not just the little dollop that’s in the picture!

Recipe for 2:

1 large egg

3 tbsps milk/cream (i prefer milk)

3 tbsps butter (it gives such an aroma!)

4 thick slices of walnut bread

1 tbsp fine white sugar (i used crystal organic sugar and it was awesome)

1 tsp ground cinnamon (optional; i didn’t manage to get it)

yogurt/berries to serve

1. Beat egg + milk/cream in shallow bowl. Heat non-stick pan over medium-high heat using butter.

2. Soak bread in egg mixture for about 30 secs, then carefully lift onto pan. (Be prepared for a little mess!) Cook on one side till golden-brown (takes about 20-30 secs) and turn to cook the other side.

3. Sprinkle sugar + cinnamon, and serve hot on its own or with yogurt +/ berries.

Fairly simple and a very tasty treat.

Current Food Favorites

Bought these chocolates to pamper myself after a round of courses, and it is now one of my favorites! Super soft and delicious.

And this is a really good and filling breakfast: country walnut bread + slivers of radish (lightly boiled) + peanut butter + warm water w lemon juice. I was full for at least 4 hours after that!

Lastly, have been making this spinach salad for a few times now, and it’s a favorite since it is so healthy yet delicious…an awesome way to get my dear husband to eat more greens.

Plus, I love the juicy punch that the Mandarin oranges give.

Recipe (especially for you, mummywords!)

1 pound fresh spinach (i’m very flexible with this; dependent on how much veg Bren is in the mood for)

2 tbsps lemon juice

1/4 cup olive oil

1 avocado, diced (i use avocado spread if i run out of avocados)

1/4 cup chopped walnuts, roasted till golden

2 Mandarin oranges

1. Wash and trim spinach; pat dry with paper towels.

2. Combine lemon juice and oil in bowl, add avocado cubes, coating well with dressing.

3. Toss spinach and walnuts with avocado and dressing.

4. Add Mandarin oranges and toss spinach salad again.

Easy, healthy and yummy!

My 30th: Bren’s Part 3 for me!

Bren brought me to his final part of his bday celebration for me on Saturday and it really made my day. Just having someone plan a nice outing is already something to be thankful for; I was extra grateful not just for the activities (which included watching Voyage de la Vie – very, very fascinating and exciting!), but the smaller things that he did throughout the day.

It truly is a blessing to be a child of God, and one of the best blessings has to be having a wonderful husband who is sweet and loving in his own unique way. Cannot give thanks enough for that!

My 30th: With friends + in-laws

The cell group celebrated my birthday yesterday after church and as usual, we had thanksgivings, appreciation and they prayed for me. It was simple but so sweet, and I really liked the story behind the cake they got me (made by an elderly couple who owned this bakery called “Love Confectionery”).

Plus, I got to play with little Iva & Iris! They bring such joy to all of us, and I just love being in their world of pirates, bedroom stories and penguins…

After that, met up with Bren’s family for dinner at this cosy Italian restaurant @ Robertson Quay – Bella Pizza. Everything was so tasty!

We took a walk around, admired the buildings and estates surrounding the area, and later made our way back where my dear SIL surprised us with tons of gifts that she brought back from Bangkok! So, so sweet.

My 30th: Bren’s Part 2

Unexpectedly, Bren brought me out for birthday celebration part 2 today!

We spent our morning cleaning the home, then had a very leisurely afternoon at different places. It was so interesting exploring with each other, chatting and laughing at random things. It’s really what we do best.

My 30th: Starting Afresh

This new year, I’m promising Him to start afresh.

To wipe clean my soul, to slowly meditate on His Word and savor every bit of it, and to go much deeper than I’ve ever been before…
