Milk Tea Cake

Just made this for Bren and I as a simple dessert after our dinner, using our Happy Call Pan (http://www.happycallpan.org).

The aroma was alluringly light and the texture reminded me a bit of banana cake – a little crisp on the outside, and moist on the inside. I reckon it’ll go pretty well with vanilla ice-cream!

225g flour
2 tsp baking powder
1/2 tsp baking soda
140g sugar
1 egg
250ml milk
2 Earl Grey tea bags
70g olive oil

1. Mix all dry ingredients. Do sieve the flour.

2. Heat milk, then pour all tea powder into hot milk and keep aside to cool.

3. Mix olive oil and egg, then add in milk tea. Tea should not be too hot when added.

4. Mix the above with all dry ingredients until no flour can be seen, tho’ be careful not to over mix the batter.

5. Pour batter into Happy Call Pan, and cook on medium low heat for 10 mins, flip pan and cook for another 4 mins.

Perfect for a relaxing weekend evening!

Stuffed Baked Apples

Stuffed Baked Apples

Tried this coupla days back and loved how warm and tender the apples turned out! The juiciness of the apples went really well with the crisp stuffing.

Healthy and delish:

25g blanched almonds

55g ready-to-eat plump dried apricots

1 tbsp clear honey

4 tbsp rolled oats

4 large apples

1. Preheat oven to 180 degrees. Chop apricots and almonds; set aside.

2. Place honey in saucepan and heat until honey has melted. Stir in oats and cook gently over low heat for 2 mins. Remove saucepan from heat and stir in apricots and almonds.

3. Core the apples, widen tops slightly and score horizontally around circumference to prevent skins from bursting during cooking.

4. Place apples and fill with stuffing. Pour just enough water into baking dish to come about 1/3 of the way up the apples.

5. Bake in oven for for 30-40 mins / till tender.

Serve immediately! Enjoy. 🙂

Birthday Party & Kaelyn Walking…

Our days have been filled with lots of children-related events. Not that I’m complaining! Love kids.

Attended my nephew’s birthday party at Gymboree, Harbourfront last week and it was my first time being in a toddler’s class/organized celebration-of-sorts where the staff would use a variety of objects to get the attention of the young ones to stimulate their interest and musicality. The whole thing was pretty amusing and I loved how my nieces and nephews were jumping and dancing around, thoroughly enjoying themselves.

And…Kaelyn is now starting to walk! Yet another wonderful milestone. The last time I saw her, she wasn’t exactly stable but still very much an improvement from weeks back. So we’re encouraging her to walk more and giving her the affirmation that she needs!

Soft Runny Eggs

Have fallen in love with them. 😉

I’ve timed it to exactly how I’d like it, and I’m now always looking forward to bursting it open with the yolk just beautifully flowing out… YUM.

Had it with rice&millet pasta and organic chicken pieces for dinner…

Flowers + Children

Two favourites of mine.

Had a sweet time with the children during the September school hols which just ended, and while we’re now preparing them for their upcoming tests & exams…wanted to take a moment to remember the fun we had, especially during the outing to Vivo City, where we brought them to a nice candy store, Sweet Enchantment, and basked in the sun with them after they splashed around happily in the water.

At the water-play area, some of the kids started running over to give me little flowers they found floating around in the water, and I thought that was really sweet. It definitely made my day!

Quiet Dinners

Quiet Dinners

I’m not one for loud, noisy parties.

Of course, there’s beauty and fun in that, but given a choice, I’d take some quiet time with my loved ones any day.

Which was why it was such a delight when Bren and I could have a super chill dinner @ Relish one evening after work.

After a day filled with meetings for both of us, and chatty kids for yours truly, it was so enjoyable to spend the evening quietly savouring our blue cheese beef burgers and salad/fries, and exchanging stories about our day.

Little pleasures.

Their 87th

Love this picture. Though it may be blurry, it places the focus all the more on their smiles, and I love it!

Brought grandma and grandaunt out for dinner to celebrate their birthdays, and it was different from what we usually had, which would be dinner at my aunt’s home. Well, since they were overseas, the rest of us gathered together for a good time at Roland’s Restaurant, and it was such a hearty meal, filled with lots of laughter, mostly from my adorable niece.

Jesus’ love is amazing. I see the difference it has made in their spirits, and I can only thank Him…the giver of all beautiful and perfect gifts…, and I pray for them to experience Him more and more each day.
